 Well I haven't played a tournament in a while, so maybe you want to disregard everything I say....
 
....for those of you still reading, I have been a TD and one of the reasons for being off the ultimate seen is running events in Ally Pally, a number of them being outdoor events, in a 200 acre park land....
 
so I feel I may have a little something to add to the debate....
 
The purple guide Sam mentioned, for those who don't know, is a very useful guide to people running outdoor events.  It gives the requirements for ratios for toilets, showers, medical team, security etc for all sorts of external events.
 
It's a really good guide, I know Ultimate and some 'fun tournaments' may not be anywhere near this stage, but from what I can gather Ultimate is growing fast, and some of these things need to be taken into account and planned into the future.
 
With regard to medical cover, I will add my Yes to I think it's necssary wherever possible.  
 
An alternative company we use is LMS- location Medical Service.  They cover several events for us here at Ally Pally and are often Paramedics doing a second job because of their shift patterns...
 
They are £15 / hour...minimum 6 hrs
Will often be able to cover an event with two weeks notice...don't know how far they cover in the country though...sorry

Hope someone gets some use from those details.
 
For the really keen and dedicated there's the local council who have several guides for example, Places which have a Public Entertainments License (this would help with the Party too) has loads of useless rules and regs about what you can and can't do while operating events...there are some useful things to know in there though!
 
To summerise...
-Yes to medical cover wherever possible
-There are alternatives available aside from St Johns such as LMS, check them out
-Try some of the literature, such as the purple guide for further advice.
